2 oz. Red Diamond Merlot
1/2 oz. Ginger syrup
1/2 oz. Lime juice
1/4 oz. Apple cider fennel shrub
2 oz. Club soda
Garnish: pickled fennel, fresh fennel and orange segments
Shake all ingredients except garnish and club soda in a tin with one ice cube. Shake until you can’t hear the ice cube anymore. Pop tin open and add club soda to tin. Pour all ingredients over medium sized rocks in a collins glass.
